The right tool for the job
After producing and posting the Chinese Pepper steak video, I had a couple of thoughts that I would like to add.
The first thought was that I used a Wok and while that is the preferred method, I realize that not everyone owns a Wok. The dish can easily be made in a large frying pan, though you may have some difficulty keeping all the vegetables in the pan. I have made similar dishes in a large frying pan and they come out fine.
Safe use of Marinades
Another thought I had or rather was brought to my attention by a friend, is that when using marinades in a dish , it is important to heat them thoroughly to kill any bacteria imparted from the meat. If you follow the recipe, it calls for heating until thick and bubbly, which is sufficent heat to kill any bacteria that may be in the marinade. I did not make this point in the video , so I thought I would add it here.
Make it snappy
You can also skip the marinade step altogether and just add the ingredients while you cook and mix the cornstarch with a couple of teaspoons of water and add it at the end. I often do this when I want to make a stir fry on a whim. I hope everybody enjoyed the video and I look forward to producing more in the coming weeks. Thanks for visiting.
