Mussels Maiorino

Ingredients

4-5 cloves garlic (chopped)
1 pound of spaghetti or linguini
1 28-32 oz can of crushed tomatoes
1tsp basil
1tsp oregano

1tsp salt
1tsp pepper
2 tbsp olive oil
1/2 cup red wine or beer (optional)

Instructions

Wash mussels thoroughly,discarding any dead mussels.
Set aside in bowl in the refrigerator. Drain off excess water.
Place spaghetti or linguini in a large pot of boiling, salted water.
In a separate pot on medium heat, add olive oil, garlic, crushed tomatoes and spices. Cook covered for 5 minutes.
Uncover sauce and add wine or beer if desired.
Carfully add mussels and avoid splashing into the sauce. (It’s Hot !)
Cover and turn heat to high and cook another 6-7 minutes or until all the mussels are open.
Drain the pasta and add some of the sauce to prevent sticking.
Place pasta in large bowl and pour the contents of the pot containing the mussels on top.

Chinese Pepper Steak

Ingredients

1 pound flank steak- sliced
Marinade- 1/4 cup soy sauce
2 Tblspn dry sherry or rice wine vinegar
1 tsp sugar
1/4 cup water

2 tsp corn starch
2 Tblspn vegetable oil - End Marinade
2 tsp ginger root - chopped or grated
2 scallions - chopped
2 Tblspn vegetable oil- for Wok

1 large Onion- sliced
2 green bell peppers- sliced
4 cloves garlic- chopped

Instructions

1. Marinate steak for 15 minutes.
2. Swirl and stir fry garlic, ginger and scallions for 30 seconds
3. With slotted spoon ,reserving the marinade, add half the steak and stir fry for 3 minutes. Remove and set aside. Repeat with remaining half.
4 Add oil and stir fry onion and green peppers for 2 minutes.
5. Push vegetables to sides of Wok. Add marinade to center of wok and stir fry until thickened and bubbly.
6. Blend in vegetables, add steak and heat thoroughly.

Salsa Cruda

Ingredients

1 28-32oz can of Whole tomatoes
1 large onion or two small onions
2 jalepeno peppers (seeded)
1 tsp salt
1 tsp pepper

1 tsp paprika
1 tsp chili powder
1 tsp dried oregano
1/2 cup fresh cilantro
1 clove garlic

Instructions

Chop the Onion into quarters and add to food processor along with jalepenos, garlic and cilantro. Pulse to a coarse grind. Add the remaining ingredients and pulse to desired consitency. Transfer to storage container and refrigerate at least one half hour. Serve with tortilla chips and garnish with fresh cilantro sprigs if desired.

If you are a broccoli hater, as I am, you are in for a pleasant surprise. I found this recipe on the back of a box of celentano cavatelli. My wife thought it looked good. I saw the word broccoli and said yuk! Well my wife convinced me to give it a try, as wives can do in their very special way, and I was surprised to find that it tasted great.

That just goes to show that you never know where you will find a great recipe. Thank you to the folks at Celentano, I hoped I spelled that right my spell checker is telling me no but that happens with proper names. So keep your eyes open for those unexpected recipes that you find on the boxes of the foods you buy, sometimes they are real winners. The great thing about this particular recipe is that broccoli haters love it. Besides myself, my daughter also likes it, and the only vegetable she eats is a french fry. I’m not even sure the potato is a vegetable, but you get the point.

As always there are mistakes I make in the video, the most glaring one is that I say I am sauteing garlic, when it is actually onion in the pan. I use those two together so often that I get confused easily.
